Bayonne, in the South West of France, during the early 16th century became the first port through which cacao was imported and the first chocolate manufacturing city in the country. Chocolate was introduced to the court of France under Louis the 14th and quickly became an obsession. If cacao is a homage to Bayonne, then chilli pepper is a homage to the neighbouring town of Espelette famous for Piment d'Espelette, imported from Latin America around the same period as cacao.
